The goal of improving baking technology is always to heighten the final product’s quality and enhance the production process, and a more efficient mix means saving in time, energy and money, when the result is a more homogeneous and consistent batter.

 

Tonelli Group knows it well, since in almost 70 years of honorable career has made of mixing its absolute specialty, by proposing a wide range of multipurpose mixers, suitable for a variety of applications, from cakes to biscuits, from pasteurized to whipped creams, from marzipan to meringues. After all, it was precisely the Parmesan company, in the seventies, to give birth to the mixer par excellence, now known in the world simply as “The Planetary”; through time it has become a mixer that can be simple or complex, depending on the customer requirements; it is normally equipped with a pair of mixing tools and a scraper, suitable for a given application, but thanks to the interchangeability with other tools it may become a universal machine. In the production of cheesecake, for example, the bladed tool can be used to mix the butter with the biscuit crumbs, while the whips or spatulas are good for the soft dough and the scraper, used alone, gently mixes the fruit coating. The versatility is to allow manufacturers to achieve all of these operations using a single machine.

 

The passion for mixing has led the Emilian researcher to develop increasingly targeted systems for each type of dough: thus were created the Horizontal mixers for hard dough of cookies and crackers; the Continuous Aerating Mixers for whipped and soft creams; the Cookers for sauces and pasteurized creams; the Heat Exchangers for complex processes where the heat treatment is all.
